A simple and enriching recipe that will nourish and warm you from the inside out
Ingredients
- 3 tablespoons olive oil
- 8 spring onions finely sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 red chilli deseeded and finely sliced
- 500 g lamb mince
- Bunch fresh coriander destalked and finely chopped
- Bunch fresh mint destalked and finely chopped
- Juice of 1 lime
Instructions
Method
- Heat the oil in a frying pan over a medium heat, add the onions and fry gently until softening
- Add the cumin, coriander and chilli stirring to combine for approximately 2 minutes
- Stir in the mince, breaking it up to avoid any lumps, and cook until everything is beautifully combined and the lamb mince is cooked how you like it – dare to go crispy 🙂
- Once cooked, take off the heat and stir through the coriander and mint
- Add the lime juice and serve on a bed of salad, in tacos or with your favourite vegetables
Top tips
- Add extra vegetables of your choice – finely chopped red pepper and fresh spinach work well
