Heat the oil in a frying pan over a medium heat, add the onions and fry gently until softening
Add the cumin, coriander and chilli stirring to combine for approximately 2 minutes
Stir in the mince, breaking it up to avoid any lumps, and cook until everything is beautifully combined and the lamb mince is cooked how you like it - dare to go crispy 🙂
Once cooked, take off the heat and stir through the coriander and mint
Add the lime juice and serve on a bed of salad, in tacos or with your favourite vegetables
Top tips
Add extra vegetables of your choice - finely chopped red pepper and fresh spinach work well
