Flax seed bread

Ingredients
  

  • 4 tablespoons olive oil
  • ¼ cup flaxseeds
  • ½ cup ground flaxseeds
  • ½ cup water
  • 100 g fresh spinach
  • 1 teaspoon black pepper
  • 2 teaspoons dried herbs oregano, chives and basil all work really well

Instructions
 

Method

  • Warm 2 tablespoons of the olive oil in a frying pan over a medium heat
  • Place the rest of the ingredients into a bowl or blender and mix thoroughly until you have a soft dough
  • Take a generous spoonful of the mixture and flatten it out until it is about 3mm thick and covering the frying pan
  • Cook for about 5 minutes until beginning to crisp, then flip gently to cook on the other side

Top tips

  • Make as little round breads for sharing
  • Keep the uncooked mix in the fridge and make up the breads as and when needed
  • Have fun adding all sorts of other things once you have nailed this recipe… spring onions, fresh herbs, dried herbs and spices…
